Crock Pot Turkey Breast

1 WHOLE turkey breast 3-5 pounds, whatever will fit in your crockpot (Mine holds 8 lbs)

1-2 onions

minced garlic, salt and pepper

water (at least 1C)

Spray the insides of the crock pot with cooking spray. Quarter the onions and put in the bottom of the crock pot. Pour in 1C water (or more if you want more broth). Wash the turkey breast and pat dry with paper towels. Spray the turkey breast skin with cooking spray (or brush with olive oil), then generously cover with minced garlic, salt and pepper. Put the lid on the crock pot and cook on low for 8-10 hours.

Serve with baked potatoes and steamed broccoli and carrots.

Take the leftover turkey off the bone and save it in a ziploc bag in fridge or freezer for future recipes (like the pot pie below, or turkey and dumplings, or turkey enchiladas), or sandwiches.
